Baby, It’s Cold Outside. Warm Up With Soup.

Living in northwest Pennsylvania can sometimes be a challenge in the winter. The lake effect snow coming off of Lake Erie tends to pile up and days when the temperature doesn’t make it out of the teens it is a bit chilly. But at the same time, it is beautiful. The snow hanging off the trees look like big puffs of cotton and the ground is a pure white blanket. Here is a quick and easy soup recipe to help you warm up in this weather. It is low in fat and high in protein.

Spicy Black Bean Soup

2 tsp oil

2 garlic cloves, smashed

1 cup finely chopped onion

1 medium yellow or red pepper, diced

1 tbsp chili powder

2 tsp cumin

1/2 tsp dried oregano

2 15-ounce cans of black beans

2 14.5-ounce can of fire-roasted crushed tomatoes

1 chipotle chile in Adobo sauce finely chopped. (More can be added for a spicier soup)

1/4 cup fresh chopped cilantro

Nonfat plain Greek yogurt or Sour Cream (optional)


Heat oil on medium-low heat in a large pan.

Sauté garlic, onions and chopped pepper until softened. Add chili powder, cumin and oregano, followed by black beans, tomatoes and chipotle chile with sauce.

Bring to a boil, then simmer for 10 minutes. Add cilantro. Simmer for 5 more minutes.

Serve in bowls with a dollop of yogurt or sour cream on top and a side of corn bread.

Makes 4-6 servings
Caution: If you have never used Chipotle peppers in Adobo sauce be careful. Start with only one chili and a small amount of the sauce as it is very spicy. The leftover chilis and sauce will freeze very nicely.

I have been making this recipe for a number of years and have no idea where I got it. It is very spicy but we all love it.
